The apple and headed cabbage salad seasoned with cumin is a real triumph of simple tastes from Trentino! The cabbage is grown in the vegetable garden of a farmer from Torbole sul Garda, whereas the apples have been purchased at the Agraria di Riva del Garda. It is an important company of the Alto Garda district which sells excellent extra virgin olive oils and selected wines, and where you can find fruit and vegetables like the tasty apples we use in this recipe (for your knowledge, the type is Pink Lady).

The choice of the right raw materials means everything when preparing a genuine dish like this. The Garda Trentino district can luckily offer a lot of culinary excellences! From extra-virgin olive oil to honey, from small fruits and berries to the Broccolo di Torbole (a specific kind of green broccoli which takes its name from one of the villages of this area), going through famous productions as the carne salada (salted beef). Plenty of recipes can be prepared with a bit of phantasy and high-quality products! After all… with such a view, imagination can’t be missing!

Ingredients:

1 headed cabbage

2 apples (the type is your choice)

extra virgin olive oil from Garda Trentino

salt and black pepper

cumin seeds

red wine vinegar

Carefully clean the cabbage, cut it into thin strips, slice the apples after having peeled them and chopped them up. Season with our oil, salt, pepper, vinegar and cumin as much as you like

The sweet taste of the apples creates a really mouthwatering sweet-and-sour contrast!
